A sensor’s sensitivity and a display’s resolution describe different properties. Keep their units and definitions separate.
Two specifications, two questions
Sensitivity relates a change in indication to a corresponding change in the quantity being measured. Resolution concerns the smallest distinguishable change. A high signal slope does not by itself establish the resolution or uncertainty of the complete measuring chain.
An invented signal model
Suppose an illustrative transducer produces 2 mV per unit of input. A ten-unit change then corresponds to 20 mV under that stated linear model. The display increment, electrical noise and signal processing still determine what changes the complete system can distinguish.
Increasing an amplifier gain can enlarge the indicated signal without improving the original sensor information. It may also affect available range. These invented values do not select a load cell, amplifier or HM machine component.

Record the sensor output relationship, excitation where relevant, conversion electronics, filtering and indicated units. Ask which component a resolution claim describes. Evaluate the end-to-end measurement result rather than combining unrelated brochure numbers.
